Another really good cookie.



I know, how boring, right? how many cookies can I make before it gets old? well, I have to say, these days, the one bowl cookie dough is about all I can muster. Especially with my 2 year old helper bee. he loves to stir, and to use a heavy hand with the sprinkles. Anything more elaborate than a cookie and he likely loses interest. so, we keep it simple around here for now. and good, we keep it good.

These cookies, I have made like 5 times in a row. I have made them crunchy and chewy and my last adaptation to the recipe was to use all whole wheat flour in place of white. and, they are still damn good. so good that I baked 12 and then proceeded to eat the other dozen in cookie dough form before they could even hit the baking sheet.

Try them. if you like peanut butter and chocolate, you might be hooked.

Peanut Butter Oatmeal Chocolate Chip Cookies.

1/2 cup butter
1/3 cup brown sugar
1/2 cup sugar
1/2 teaspoon vanilla
1/2 cup peanut butter, chunky
1 egg

1 cup whole wheat flour
1/2 cup oats
1 teas baking soda
1/4 teas salt
1 cup chocolate chips

Mix dry ingredients, set aside. soften butter and whisk it with the sugars, vanilla and pb. add egg and whisk until creamy. add dry ingredients. then chocolate chips. bake 350 for 10-15 minutes, depending on how you like em. about 12 min for chewy and 15 plus for crunchy.

I still love you, I do.

So so sorry that I have left this blog completely unattended! The last days of pregnancy and now a newborn in the house has left me a without any time or much energy. I have been baking, of the one bowl variety, throw in all the ingredients and mix. mostly quick breads and cookies. the cookie I will share with you here, I promise. Its so good I keep making it over and over.
Peanut Butter Oatmeal Chocolate Chip. Its my new fave. until then, Happy Heart Day to you.
