In reference to the Strawberry Tart below, this was a variation. I used some lovely Blueberries and Cherries as well as the Strawberries. This tart filling firmed up a little more, most likey due to the added pectin in the Cherries and Blueberries. They also added an element of tartness to the ensemble, which I found, balanced the sweetness of the Strawberries pretty well.
